Sweet 🍯 and Spicy 🌶 Red Lentils with Basmati Rice

Ingredients


1/2 cup Red lentils, split
1/2 cup Basmati rice, dry
2 clove(s) Garlic (minced)
1/3 cup White onion (diced)
1/4 tsp Cayenne pepper (or to taste)
1/2 tsp Turmeric, ground
1/2 tsp Cumin
1/4 tsp Cinnamon
1/4 tsp Ginger, ground
1/4 tsp Paprika
1 dash Nutmeg, ground
1 dash Cardamom, ground
1 tsp Honey, raw
1 tbsp Cilantro (coriander) (chopped)

Instructions


In a saucepan, I warmed some coconut oil. 
To that I added 2 cloves of minced garlic and 1/2 white onion chopped, sauté until softened. About 1 minute 🧅🧄

Add 1/2 cup of Basmati rice and 1/2 cup of dal red lentils. Mix and combine well. 🍚

Add water until everything is well covered, at 1-2cups. Bring to a boil, add a pinch of salt and reduce to low heat, then allow to simmer. Keep stirring and add more water if the mixture dries up too quickly.

At about 15 minutes it should be ready, rice and lentils are tender but not mushy. So time may vary depending on your stove. Tasting is the best way to tell. 😋

Turn the heat off and add 1/2 tsp if turmeric & cumin, 1/4 tsp of cayenne, 1/4 tsp paprika, dash of cardamom if you have it, dash of nutmeg, dash of cinnamon and ginger. Of course, you may adjust spices to your space. If you have curry powder, that will incorporate a bunch of spices and may be sufficient. 💚

Add 1tsp if honey and combine well. Let this sit aside for a few minutes to let these flavours blend. Top that off with some fresh chopped cilantro and enjoy!
