Sweet Bean Salad with Beets

1 medium Apple (chopped)
1 medium Baby carrots (chopped)
1 tbsp Balsamic vinegar
2 beet(s) Beets, raw (diced)
1 cup Cranberry beans, canned (rinsed and drained)
4 leaf Basil, fresh (chopped)
2 tbsp Olive oil
1/4 cup Yellow onion (finely chopped)


Rinse and drain canned beans. Chop apples (without core) and carrots.

Peal beats, cut in cubes and boil in excess water until tender but not mushy- about 15 minutes. Remove from water, allow to cool, and chop into small pieces.

To make dressing: mix olive oil, salt, balsamic vinegar and fresh basil.

Mix beans with chopped apple, red beets and carrots. Add the finely chopped onion and dressing. Let it sit for 10min and serve.
