4 date pitted | Medjool date |
480 gm | Sweet potato (peeled and cooked) |
2 cup | Coconut milk, reduced fat (unsweetened if you can find it) |
1/4 cup | Nutritional yeast |
1 cup | Nuts, pecans, dry roasted (ground or chopped) |
1 tbsp | Cinnamon (ground) |
1 tsp | Allspice, ground |
1 tbsp | Himalayan sea salt |
1 tbsp | Vanilla extract, pure |
Serving size: 1/2 cup cooked
1. Peel and cook sweet potatoes until tender.
2. Place sweet potatoes in blender with other ingredients including 1/2 cup pecans (save other 1/2 cup for garnish).
3. Pulse ingredients until blended but not puree'd.
4. Pour mixture into baking dish and top with remaining 1/2 cup chopped pecans.
5. Bake in the oven at 375-degrees fahrenheit for 30-minutes or until top is golden.
let cool and enjoy!
NOTES:
you may sub the dates for 2 tbsp of pure maple syrup.
Add pumpkin seeds instead of pecans as garnish for a nice change.
