1 large potato Sweet potato (baked, cooled, cubed)
1 can (15oz) Black beans, canned (drained, rinsed)
1 large Tomato (diced)
1 large White onion (diced)
1 tsp Cumin
1 tsp Paprika
1 dash Black pepper (to taste)
4 large tortilla(s) Whole wheat tortilla
2 cup Baby spinach (for topping)
1/2 cup Salsa, ready-to-serve (for topping)
1 avocado(s) Avocado (for topping)


Sauté onion, black beans and tomato in pan. Add spices. Add cubed sweet potato. Bring to a simmer.

Scoop the sweet potato filling into tortilla shells (warmed in the oven) and sprinkle on your favourite toppings.

Serve and enjoy!
