1/2 medium | Yellow onion |

Peel and dice 2 large sweet potatoes
Place in a glass casserole and drizzle with avocado oil, sprinkle with garlic powder, onion powder, thyme, salt and pepper (add paprika if desired)
Roast in oven at 450 degrees for 55-65 minutes stirring 3-4 times
When there is 15 minutes left, caramelize the onions and garlic with avocado oil.
Add your fully baked sweet potatoes to the onions.
Cook kale lightly and add on top, sprinkle with hemp seeds and ENJOY!
