Sweet Potato Nachos with Shredded Chicken

1 breast Chicken breast, boneless, skinless (use pre-cooked shredded chicken)
2 tsp Coconut oil (divided, for cooking oil and baking potatoes)
1/4 small White onion (diced)
1 medium pepper(s) Jalapeno pepper (use only desired amount, diced)
1/2 tsp Cumin
1/4 tsp Cayenne pepper
1 clove(s) Garlic (minced)
1/2 tsp Salt
1/2 tsp Black pepper
1 large potato Sweet potato (sliced thin)
1 avocado(s) Avocado (for quick guacamole)
1 small Tomato (chopped, for quick guacamole)
1 tbsp diced White onion (for guacamole)
1/2 fruit Lime (squeeze of 1/2 lime)
1 sprig Cilantro (coriander) (for guacamole)
1 pinch Salt and pepper (for guacamole)

Instructions


  1. To make the sweet potato chips, preheat the oven to 375 degrees F. Peel the sweet potatoes and slice thinly, using either a mandolin or sharp knife. In a large bowl, toss them with coconut oil and salt. Place the chips in a single layer on a rimmed baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.
  2. Start on nacho toppings while potatoes are cooking. You should have pre-cooked shredded chicken from the slow cooker recipe. 
  3. Heat up coconut oil in medium skillet on stove. Add onions and jalapeno. Cook for 3-4 minutes.
  4. Add in pre-cooked shredded chicken and spices. Stir and cook all together on medium for 4-5 minutes and then turn burner on low. 
  5. To make the guacamole, add avocado, diced onion, diced tomatoes, cilantro, squeeze of lime and salt & pepper. Mash all together in a bowl. Set aside. 
  6. Once sweet potato chips are done, arrange on a large plate. Add shredded chicken mixture and top with guacamole. Add salsa if desired. 

Notes:

Don't be discouraged if your "chips" don't turn out very crispy! It takes some trial and error to get them to be like chips. Even if they are like little sweet potato bites, this dish is still super good!
