| 2 medium potato | Sweet potato (spiralized) | 
Spiralize the sweet potato into noodles by using a spiralizer, or a peeler. Bake the sweet potatoes for 5 minutes to soften them if they are too hard to spirailze.
Add 2 tablespoons of olive oil to a large pan and heat over medium heat. Add the sweet potato noodles and cook for about 10 - 15 minutes, stirring occasionally.
Meanwhile, prepare the honey almond butter sauce by combining the almond butter, honey, olive oil, salt and pepper in a small jar or bowl.
When the noodles are finished cooking (they should be soft enough to eat and have a very lightly fried look to them), pour the sauce over the noodles (as much as necessary). Stir until the noodles are well-coated with the sauce, adding more if needed.
Serve the noodles in a bowl or plate. Add roasted broccoli as a side.
