6 medium potato(es) Sweet potato
2 medium Navel orange (peeled,sectioned)
1/4 cup Orange juice
2 tbsp Date sugar
1 cup Walnuts (halves)
1 can (15oz) Pineapple, canned (drained) (rings)

Instructions


Bake sweet potatoes at 350 degrees for 1 hour or until soft. Remove skin and any browned area.

Blend oranges, juice, date sugar, and walnuts together in a blender or food processor and mix in the sweet potatoes.

Spoon into a glass baking dish, place pineapple rings on top, and bake for another 10 minutes at 300 degrees.
