Sweet Potato Tuna Melt

Ingredients


1 medium potato Sweet potato
2 tbsp Extra virgin olive oil
1 can drained Tuna, albacore, flaked, canned in water
1/4 large Red onion (diced)
1/2 tsp Salt
1/4 tsp Garlic powder
1/2 tsp Paprika
1 tbsp Barbecue sauce
1 tbsp Grainy mustard
7 slice Cheddar cheese

Instructions


1. preheat oven to 350 Ferenhiet  

2. slice sweet potato in length wise 1 cm thick slices. 

3. Brush sweet potato with olive oil. places sweet potatoes on baking sheet and cook for 30 to 4o minutes checking and flipping them every 15 minutes. 

4. While the sweet potatoes are cooking mix together the drained tuna with the spices and barbecue sauce, mustard and red onion. 

5. When the sweet potatoes are cooked through you can take them out of the oven and sprinkle with half salt and paprika. 

6. turn the oven on to broil. Place the tuna mixture on the sweet potatoes and a slice of cheese on top. Place the sweet potatoes back in the oven for 5 minutes, or until the cheese is melted and bubbling.
