Sweet Potatoes Cooked With Egg

Super simple seasoned, baked sweet potato topped with two over-easy eggs.

Ingredients


1 medium potato Sweet potato
2 large Egg
1 tsp Vegetable oil
1 tsp Honey, raw
1 pinch Sea Salt
1 dash Black pepper

Instructions


1. Preheat oven to 400F. Line a baking sheet with parchment paper. 

2. Once the oven is done pre-heating, bake the sweet potato in the oven for about 1 hour, or until the sweet potato starts to let out of a sweet, caramelized aroma and is cooked through (tender when poked with a fork). Let it cool, and cut the sweet potato in half with a knife.

3. Once the potatoes are done cooking, cook the 2 eggs over-easy in the vegetable oil over medium heat to preferred done-ness.

4. Place the 2 cooked eggs on top of the sweet potato. Top with honey, and salt and pepper to taste.
