Place quinoa, water, cinnamon, salt in a small saucepan and place over high heat. Bring to boil, reduce heat to low and simmer covered, about 15 minutes, until almost all water is absorbed. Stir in remaining ingredients and simmer, un-covered, for another 10 minutes. Let sit 5 minutes before serving.
