2 cup | Chickpeas, canned, drained |
1 tbsp | Extra virgin olive oil |
1 1/2 tbsp | Maple syrup, pure |
1 tsp | Cinnamon |
1 tsp | Nutmeg, ground |
Preheat the oven to 350F and line a baking sheet with parchment paper.
Rinse and pat dry the chickpeas as much as possible.
In a medium bowl, mix the chickpeas with the olive oil until evenly coated.
Spread the chickpeas on the baking sheet and bake for 50 minutes, mixing about half way through.
Remove from the oven, place in a bowl, add the maple syrup, cinnamon and nutmeg, and mix well.
Spread the mixture back on the baking sheet and continue baking for another 10-15 minutes.
Remove from the oven, let cool, and store in an air-tight container.
Chickpeas are a great source of plant-based protein, fibre, potassium, magnesium, iron, calcium, manganese, vitamin B6, and folate.
