Ingredients


1 cup Brown rice, short-grain, cooked
454 gm Beef, ground, lean
2 tbsp Taco seasoning mix, McCormick
2 clove(s) Garlic (diced)
4 cup Lettuce, romaine (chopped)
1 medium pepper(s) Yellow bell pepper
1 cup chopped Tomato
1 cup slices Avocado
2 sprig Cilantro (coriander) (chopped)
2 fruit Lime

Instructions


  1. Cook rice according to package.
  2. Cook the ground beef in a large skillet over medium-high heat, until thoroughly browned and cooked, stirring in the Taco seasoning Mix Spice Blend and garlic when the ground beef is halfway done.
  3. In the meantime, evenly arrange the cooked rice, lettuce, bell pepper, tomato, and avocado in 4 individual bowls.
  4. Add the ground beef to each bowl once done cooking. Top with cilantro and squeeze lime juice over the salad as a dressing. 

Notes:

Can use spinach instead of romaine lettuce.

Can top with shredded cheese, sour cream, or nachos.

Can be served in taco shells or taco bowls. 

Vegetarian: can swap ground beef for tofu or canned/cooked chickpeas.
