This salad is simple to make when you have prepared ingredients on hand!
Ingredients
2 cup
Lettuce, spring mix (mesclun)
(any mixed greens will do!)
2 tbsp
Green onion
(sliced)

Chicken breast, boneless, skinless
(or salmon, cooked and chopped)
1/2 medium potato(es)
Sweet potato
(cooked)
1/2 cup
Beets, raw
(shredded)
1/2 cup
Cucumber
(chopped)
1/2 avocado(s)
Avocado
(sliced)
1/3 cup
Raspberries
(use fresh or forzen)
1 tbsp
Sauerkraut
1 tbsp
Goat cheese, soft
1 tbsp
Balsamic Vinaigrette
Instructions
On a plate or in a bowl assemble the prepared salad ingredients in the following order: mixed greens, green onions, chicken, sweet potato, beets, cucumber, avocado, raspberries, sauerkraut and goat cheese. When ready to serve, drizzle dressing or balsamic vinegar and toss till combined. Prepare ahead of time and refrigerate.
