(cooked, seasoned with Taco Seasoning)

Orange bell pepper
(diced, any colour (red, yellow, orange or green))
8 small grape tomato(s)
Grape tomato (s)
(or 1/2 cup diced tomatoes)
1/2 cup
Frozen yellow corn kernels
(optional)
1/2 avocado(s)
Avocado
(sliced)
1/4 cup
Salsa, ready-to-serve
1/4 cup
Greek yogurt, plain, 2% M.F.
1 tbsp
Goat cheese, hard
(shredded (optional))
Instructions
On a plate or in a bowl assemble the prepared salad ingredients in the following order: spinach, green onion, taco meat, peppers, tomatoes, (corn), avocado and cheese. When ready to eat, serve with salsa and yogurt. Make ahead and refrigerate.
