1 head Lettuce, romaine (inner leaves, whole)
1 cucumber(s) Cucumber (cubed, small)
1 mango Mango (cubed, small)
1 medium pepper(s) Red bell pepper (cubed, small)
1/4 medium Red onion (finely diced)
1 pepper(s) Serrano pepper (finely diced)
1 pinch Himalayan sea salt (or to taste)
2 fruit Lime (Juiced)
1 tbsp Extra virgin olive oil (or to taste)
1 cup Arugula (torn to bite size pieces)


1. Wash Romaine lettuce and remove the beautiful inner leaves that will make the perfect boats to serve our salad on.
2. Toss the remaining ingredients in a large bowl
3. Spoon as much of the salad on each leaf as it can handle
4. Serve about 3 per plate for a great appetizer/salad
