Ingredients


1/4 cup Teff grain, cooked
7 date pitted Medjool date
3/4 cup Cashew nuts, raw
2 tsp Cocoa powder, unsweetened
1 tsp Peanut butter, natural
1/4 tsp Sea Salt
1 dash Cinnamon
2 tbsp Coconut chips (unsweetened)

Instructions


  1. Set your oven to 350°F.
  2. To toast the teff, place it in a dry skillet over medium heat for 5 minutes, stirring constantly until it turns fragrant and golden.
  3. Use a food processor with a steel blade attachment to blend the dates, ½ cups of cashews, cocoa powder, salt, and cinnamon until they turn into a smooth, sticky paste. 
  4. Take the remaining ¼ cup of cashews and chop them up roughly, along with the coconut chips. Add these, along with the toasted teff grains, into your date-cashew mixture. 
  5. Stir it all together until well combined. Roll the mixture into bite-sized balls, about ½ inch in diameter. Once you're done, store them in an airtight container. You can keep them at room temperature or pop them in the fridge to enjoy later. 1 serving is approximately 3 energy bites.
