400 gm Beef, tenderloin, lean (sliced and cut into strips)
1/2 tsp Black pepper
2 tbsp Canola oil
1 tbsp Cornstarch
4 clove(s) Garlic (skinned and finely chopped)
1 tsp Granulated sugar
3 green onion (stem) Green onion (sliced, white only and leaves for garnish)
1/3 cup Oyster sauce
2 pepper(s) Red chili pepper (also chile or chilli) (sliced)
3 mushroom(s) Shiitake mushroom, dried (soaked in warm water and finely sliced)
2 tbsp Soy sauce, low sodium
2 cup whole White mushrooms (cut in half)

Instructions


Dissolve the cornstarch in soy sauce in a bowl. Add the beef into the mixture. Leave for about 20 minutes. Remove the beef and set aside.

Place a wok over a medium heat and add the canola oil. When the oil is hot, add the garlic and stir-fry until light golden in colour. Add mushrooms (both kinds), and continue stirring until the mushrooms are almost cooked. Add the beef and stir-fry until the beef is cooked through.

Add the oyster sauce, sugar and black pepper. Stir well. Add the onions (scallions) and chillies. Mix well.

4. Serve, garnished with spring onion leaves.
