Thai Pineapple Fried Rice

1/2 cup Cashew nuts, roasted
3 tbsp Chicken broth (stock)
1/4 cup Cilantro (coriander) (chopped)
1 cup Shrimp, cooked (optional)
1 tbsp Curry powder
1 medium egg Egg (lightly beaten)
1/4 cup Frozen green peas
3 clove(s) Garlic (chopped)
2 stalk(s) Green onion (sliced)
1 pepper(s) Red chili pepper (also chile or chilli) (chopped)
1 cup diced Pineapple (cut into bite sized pieces)
1/4 cup Raisins, seedless (sultana)
1 medium pepper(s) Red bell pepper (diced)
2 medium shallot(s) Shallots (sliced)
3 tbsp Soy sauce
1 tsp Granulated sugar
1 tbsp Vegetable oil
3 cup White rice, medium-grain, cooked


Heat the oil in a pan. Add the shallots, garlic, chillies and red pepper and stir-fry until fragrant, about a minute.

Add the egg and stir-fry for a minute.

Add the chicken stock, fish sauce, curry powder and sugar and stir-fry. Add the cashews and stir-fry for 30 seconds.

Add the rice, break up any clumps and stir-fry for a few minutes.

Add the pineapple, shrimp, peas and raisins and stir-fry to mix them in.

Remove, and serve.
