1 stalk Lemongrass
1 pepper(s) Red chili pepper (also chile or chilli) (fresh)
1 clove(s) Garlic
20 gm Cilantro (coriander) (of fresh)
50 gm Red bell pepper
3 anchovy Anchovy, canned in olive oil, drained
2 tbsp Tamari, gluten free, reduced sodium
1 tbsp Sesame oil (tsp)
1 piece, 1-inch Ginger root (of fresh)
1 tbsp Coconut oil
50 gm Green onion
400 gm Shrimp, cooked
400 gm Haddock
50 gm Sugar snap peas
1 can(s) (13.5 oz) Coconut milk, sweetened
1 tbsp Ghee
300 gm Cauliflower crumbles/rice

Instructions


  1. Trim the lemongrass and remove the tough outer leaves. Add to your food processor, along with the chilli, peeled garlic, coriander, red pepper, anchovies, soy sauce and sesame oil, peeled ginger, scallions and blitz all of the ingredients to a paste.
  2. While the food processor is running, put a frying pan on a medium heat and add the coconut oil. 
  3. Add the paste to the pan and sauté for a few minutes.

  4. Add the sugar snap peas, chopped bok choy and red bell pepper to the pan and sauté until softened. 

  5. Pour in the coconut milk and bring to the boil then simmer for 5 minutes.

  6. In a large skillet, melt the ghee and add the cauliflower rice, sauté for 5 minutes.

  7. To the curry, add the haddock and submerge into the curry sauce and cook for a further 5 minutes.

  8. Add the shrimp just a minute before the end to warm through.
