The Great Green Sandwich
Sushi made a fresher way using the garden’s bounty.

Ingredients


2 slices Bread
Avocado (whole)
1 Cucumber (small)
1 Arugula
(optional: Heavenly Garlic Hummus (see recipe in The Frugivore Diet (I) pg. 63) optional: Everything But the Bagel sprinkle (available at Trader Joe's))

Instructions


1. Rinse fresh veggies.

2. Slice cucumbers into thin rounds.

3. Slice avocado into thin slices.

4. Toast bread lightly.

5. Spread avocado on toast.

6. Add cucumber slices, arugula, and hummus and Everything But the Bagel sprinkle if desired.
