|1 cup||Rolled oats- Gluten Free (pre soaked)|
|1 cup||Cottage cheese (1% M.F.)|
|1 cup||Egg white|
|2 tsp||Baking powder|
|1 pod||Vanilla bean|
|4 cup||Frozen berries (or fresh)|
|1/8 cup||Chia seeds|
|1 tsp||Lemon juice (splash )|
|1 drop(s)||Stevia sweetener, liquid (to taste)|
Place pre-soaked oats in a blender container and blend until powdered.
Stop the blender and add egg whites, cottage cheese, baking powder, vanilla and stevia.
Blend until thoroughly combined. Heat a cast-iron skillet or griddle over medium heat and coat it with a tiny amount of butter.
Spoon pancake mixture onto skillet or griddle to make several medium-size pancakes at a time.
When the bottom of the pancakes are golden brown and the tops are bubbly, flip over to cook the other side.
Transfer to a plate to keep warm while you cook the remaining pancakes. Serve with berry sauce (next recipe).
Combine all ingredients in a blender container. Blend until you reach the desired consistency. Refrigerate until needed.
