1 cup | Rolled oats- Gluten Free (pre soaked) |
1 cup | Cottage cheese (1% M.F.) |
1 cup | Egg white |
2 tsp | Baking powder |
1 pod | Vanilla bean |
4 cup | Frozen berries (or fresh) |
2 tbsp | Chia seeds |
1 tsp | Lemon juice (splash ) |
1 drop(s) | Stevia sweetener, liquid (to taste) |
Place pre-soaked oats in a blender container and blend until powdered.
Stop the blender and add egg whites, cottage cheese, baking powder, vanilla and stevia.
Blend until thoroughly combined. Heat a cast-iron skillet or griddle over medium heat and coat it with a tiny amount of butter.
Spoon pancake mixture onto skillet or griddle to make several medium-size pancakes at a time.
When the bottom of the pancakes are golden brown and the tops are bubbly, flip over to cook the other side.
Transfer to a plate to keep warm while you cook the remaining pancakes. Serve with berry sauce (next recipe).
Combine all ingredients in a blender container. Blend until you reach the desired consistency. Refrigerate until needed.
