THM Pancakes with Berry Sauce

1 cup Rolled oats- Gluten Free (pre soaked)
1 cup Cottage cheese (1% M.F.)
1 cup Egg white
2 tsp Baking powder
1 tsp Vanilla extract, pure
1 drop(s) Stevia sweetener, liquid (to taste)
4 cup Frozen berries (fresh or frozen)
2 tbsp Chia seeds
1 tsp Lemon juice
1 drop(s) Stevia sweetener, liquid (to taste)


Place pre-soaked oats in a blender container and blend until powdered. Stop the blender and add egg whites, cottage cheese, baking powder, vanilla and stevia. Blend until thoroughly combined.

Heat a cast-iron skillet or griddle over medium heat and coat it with a tiny amount of butter.

Spoon pancake mixture onto skillet or griddle to make several medium-size pancakes at a time.

When the bottom of the pancakes are golden brown and the tops are bubbly, flip over to cook the other side. Transfer to a plate to keep warm while you cook the remaining pancakes. Serve with berry sauce


Combine all ingredients in a blender container. Blend until you reach the desired consistency. Refrigerate until needed.
