Ingredients


2 cup Tigernut flour
1/2 tsp Baking soda
1/4 tsp Sea Salt
1/2 cup Maple syrup, pure
1/3 cup Coconut oil
3 tsp Vanilla extract, pure
1/2 cup Dark chocolate chips (Enjoy Life brand)

Instructions


  1. Preheat oven to 350oF (180oC).
  2. Mix dry ingredients together.
  3. Add syrup and vanilla and mix well.
  4. Add the coconut oil and smash into dough using a hard spatula or back of spoon.
  5. Mix in chips until well combined (dough will be sticky).
  6. Roll about a teaspoon sized balls and place on parchment lined baking sheet (or 14 cookies)
  7. Bake 15 minutes. They will be soft. Let them cool!! (they will fall apart if you do not let them sit). Serving is 1 cookie per day.
