Ingredients


1 cup Tigernut flour
1/4 tsp Baking soda
1 dash Sea Salt
1/4 cup Honey, raw (or maple syrup)
3 tbsp Coconut oil
2 tsp Vanilla extract, pure
1/4 cup Dark chocolate chips (enjoy life brand)

Instructions


  1. Preheat oven to 350 degrees F
  2. Mix dry ingredients
  3. Add honey and vanilla and mix well
  4. Add the coconut oil and smash into dough using a hard spatula or back of spoon
  5. Mix in chips until well combined (Dough will be sticky)
  6. Roll about a teaspoon sized balls and place on parchment lined baking sheet (or 14 cookies)
  7. Bake 15 minutes at 350 degrees F (They will be soft)
  8. Let them cool!! (Or they will fall apart. Trust me. I know it’s hard.) Serving is 2 cookie per day
