454 gm Green/yellow string beans, raw
3 tbsp Extra virgin olive oil
1 dash Salt and pepper (freshly ground; to taste - sea salt)
1 tsp Paprika (to taste)

Instructions


  1. In a large sauté pan, bring 5 cups water to a boil. Drop the green beans into the water and cook for 3 to 4 minutes. Drain in a colander, then run cold water over them for a few seconds to stop the cooking process. This will ensure that you don’t end up with soft and mushy beans.
  2. Heat the olive oil over medium heat. Return the green beans to the pan along with salt, pepper and paprika to taste. Sauté until the beans are heated through.
  3. Optional: Add toasted pine nuts!
