2 tbsp Olive Oil, Extra Virgin
2 tsp Dijon mustard
1 tsp Garlic (chopped)
1 tbsp Rosemary, dried
1 tsp Oregano, dried
1 dash Salt and pepper (freshly ground; to taste)


  1. Preheat the oven to 375°F.
  2. Place the tenderloin in a rectangular baking dish.
  3. Combine the olive oil, mustard, garlic, rosemary, oregano, salt, and pepper in a small bowl.
  4. Slather the mixture on the pork using your hands or a basting brush.
  5. Bake the tenderloin, uncovered, for 40 to 45 minutes, until the pork is no longer pink in the center.
  6. Cut into 1-inch slices to serve.
