1 package Taco seasoning mix, McCormick (plus water as directed on the package)
2 cup slices Red bell pepper
1/4 cup Salsa, ready-to-serve, low sodium, hot/medium (plus more for serving)
8 cup Lettuce, romaine (shredded)
2 cup chopped Tomato
2 cup Pepper jack cheese (shredded)
1 cup Sour cream, 14% M.F.


  1. Cook the ground beef in a large skillet over medium heat until browned. Add the taco seasoning and water, peppers, and 1/4 cup salsa and simmer until the vegetables are al dente.
  2. Arrange the lettuce and tomatoes on salad plates and spoon the taco mixture on top. Serve with shredded cheese, sour cream, and additional salsa.
