Tofu Hummus Tortillas

2 cup Chickpeas, canned, drained (drained, rinsed)
1/2 tsp Cumin
1 clove(s) Garlic (minced)
1 cup shredded or chopped Iceberg lettuce
2 tbsp Lemon juice
1/2 cup Tomatoes, canned, stewed (dieced)
2 tsp Salsa, ready-to-serve (to taste)
1/2 tsp Salt
1/4 cup Tahini
300 gm Tofu, silken, soft (drained)
4 large tortilla(s) Whole wheat tortilla


In food processor bowl, pulse chickpeas until coarse. Add tofu, tahini and lemon juice. Purée until smooth. Add garlic, cumin, salt and hot pepper sauce, if using and pulse until combined.

Divide mixture evenly among centre of tortillas. Top with salsa. Sprinkle centre of each tortilla with lettuce and tomato. Roll up and enjoy.
