Instructions
Pour 1 tsp of the sesame oil into a large frying pan. Scramble and cook egg in sesame oil. When cooked, remove from pan and set aside. Pour remaining 1 tsp of sesame oil into frying pan. Cook garlic and ginger until soft. Add shiitake mushrooms and cook 3-4 minutes, until soft. Add coleslaw and cook for another 4-5 minutes or until cabbage wilts. Stir in green onions and tofu. Add tamari soy sauce. Add egg and cook until warmed through. To serve, spread 1 tbsp hoisin sauce over tortilla and top with a spoonful of cabbage tofu mixture and roll. Be sure to soak the rice paper, if using.
