A dish to please (and fool) all the scrambled egg lovers out there! This is a delicious recipe to enjoy in replacement of scrambled eggs, and just as easy!!

Ingredients


2 tbsp Olive Oil, Extra Virgin
1/2 medium Yellow onion (diced)
2 tbsp Cornstarch
1 cup Tofu, silken, firm
1 pinch Salt (to taste)
1 dash Black pepper (to taste)
1/4 tsp Paprika
2 tbsp Nutritional yeast
1 tbsp Salsa, ready-to-serve, low sodium, hot/medium

Instructions


1) heat oil on medium-high heat in medium frying pan

2) Place onion in pan and cook until translucent and aromatic

3) add cornstarch and tofu and cook until tofu is crumbled.

4) add remainder ingredients and cook on med until no liquid. 

5) crank up the heat to high for the last minute of cooking to crisp up the tofu.

6) remove from heat and top with fresh parsley, avocado, tomato, pumpkin seeds, etc. and enjoy!

Notes:

* Use organic non GMO tofu for most nourishing, least toxic/harmful results.
