1/2 medium | Yellow onion (diced) |
2 tbsp | Cornstarch |
1 cup | Tofu, silken, firm |
1 pinch | Salt (to taste) |
1 dash | Black pepper (to taste) |
1/4 tsp | Paprika |
2 tbsp | Nutritional yeast |
1 tbsp | Salsa, ready-to-serve, low sodium, hot/medium |
1) heat oil on medium-high heat in medium frying pan
2) Place onion in pan and cook until translucent and aromatic
3) add cornstarch and tofu and cook until tofu is crumbled.
4) add remainder ingredients and cook on med until no liquid.
5) crank up the heat to high for the last minute of cooking to crisp up the tofu.
6) remove from heat and top with fresh parsley, avocado, tomato, pumpkin seeds, etc. and enjoy!
