2 tbsp Extra virgin olive oil
1/2 medium White onion
1 medium pepper(s) Red bell pepper (chopped)
1/2 medium pepper(s) Jalapeno pepper (minced)
3 clove(s) Garlic (minced)
454 gm Tomatillo (diced)
1/2 cup Chicken broth (stock), low sodium
1 fruit Lime (juiced)
908 gm Shrimp, raw (peeled and deveined)
1 pinch Sea Salt
1 dash Black pepper
1/4 cup Cilantro (coriander)
1 avocado(s) Avocado (diced)


Heat a large skillet over medium high heat and add the olive oil, then the onion, bell pepper, jalape├▒o and garlic. Cook for 3-4 minutes.

Add the tomatillos and reduce heat to medium and cook for 7-8 minutes.

Add the broth and reduce by half. Add the shrimp, salt and pepper until just cooked through.

Turn off heat and add cilantro and avocado until warmed through.
