Tomato and Mozzarella Pasta

454 gm Pasta, Rigatoni, dry
5 tbsp Extra virgin olive oil
2 clove(s) Garlic (finely chopped)
227 gm Mozzarella cheese (about 1/2 cup, torn into small pieces)
1/4 cup Basil, fresh
1/4 cup Parsley, Italian, fresh
1/2 cup grated Pecorino cheese
4 tsp Black pepper


Cook pasta according to package directions.

In a large bowl, combine oil, garlic, tomatoes, mozzarella, basil, and parsley, and gently toss.

Drain pasta, add to bowl, and toss to coat, adding more oil if necessary.

Season with pepper to taste, and top with cheese.
