Tomato Basil Salmon with Zucchini

341 gm Atlantic salmon, wild (2 (6oz) fillets)
1 bunch Basil, fresh (chopped)
1 large Tomato (thinly sliced)
1 medium Zucchini (thinly sliced length-wise)
1 tbsp Extra virgin olive oil
1 tsp Himalayan sea salt
1 tsp Black pepper


Preheat oven to 375°F. Line a baking sheet with a piece of parchment paper. Place the salmon fillets onto the paper, top with zucchini, basil, and tomato slices, drizzle with olive oil, salt and pepper.

Bake until the salmon is opaque in the center, about 20 minutes.
