2 cup Lettuce, spring mix (mesclun)
4 slice Tomato
1/2 cup Cucumber (diced)
1/4 cup chopped Red bell pepper
1/2 cup Green lentils, canned (drained)
1/2 cup, crumbled Feta cheese (or goat cheese)
1/3 cup Olive Oil, Extra Virgin
1/4 cup White wine vinegar
1 tbsp Dijon mustard
1 tbsp Honey
1 clove(s) Garlic
1 pinch Salt
1 dash Black pepper


For the salad, combine lettuce, tomato, cucumbers, peppers, lentils and cheese in a bowl.

For the dressing, combine oil, vinegar, mustard, honey, garlic, salt and pepper. Toss with salad and enjoy! Leftover dressing can be used on other salads.
