2 cup Lettuce, spring mix (mesclun)
4 slice Tomato
1/2 cucumber(s) Cucumber (diced)
1/4 cup chopped Orange bell pepper
1/2 cup Green lentils, canned
1/2 cup, crumbled Feta cheese (or goat cheese)
1/3 cup Olive oil
1/4 cup White wine vinegar
1 tbsp Dijon mustard
1 tbsp Honey
1 clove(s) Garlic (minced)
1/2 tsp Salt
1/2 tsp Black pepper


In a bowl, combine lettuce, tomatoes, cucumbers, peppers, lentils and cheese.

To make dressing, whisk together olive oil, vinegar, mustard, honey, garlic, salt and pepper in a bowl.

Toss dressing with salad.
