2 cup Lettuce, spring mix (mesclun)
4 slice Tomato
1/2 cup Cucumber (diced)
1/4 cup chopped Red bell pepper (can use any any kind of bell pepper)
1/2 cup Green lentils, canned
1/4 cup Goat cheese, semi-soft (a handful, can use feta)
1/3 cup Extra virgin olive oil (dressing)
1/4 cup White wine vinegar (dressing)
1 tbsp Dijon mustard (dressing)
1 tbsp Honey, raw (dressing)
1 clove(s) Garlic (dressing)
1 pinch Salt (dressing)
1 dash Black pepper (dressing)


In a bowl, combine lentils and salad.

Combine dressing ingredients and toss with salad.

Leftover dressing can be used on other salads.
