1/2 medium head Green cabbage (green; (shredded (about 2 cups)))
2 bunch Baby spinach
1/2 medium head Red cabbage (red; (shredded (about 2 cups)))
1 large Carrots (large; (grated (about 1 cup)))
2 tbsp Sliced almonds (sliced)
1 tbsp Sesame seeds
227 gm Pineapple Chunks (canned)
1 cup slices Strawberries
3 green onion (stem) Green onion (sliced)
454 gm Chicken Breast (large; shredded)
3 tbsp Greek yogurt, plain, 2% M.F.
4 tsp Rice vinegar
2 tsp Honey
4 tsp Pineapple juice
2 tsp Coconut aminos, Coconut Secret (or soy sauce)
2 tsp Extra virgin olive oil
1 dash Salt and pepper

Instructions


  1. Preheat oven to 425 degrees. Spread sesame seeds and almonds on a rimmed baking sheet. Bake for about 5 minutes or until golden. Set aside to cool.
  2. In a large bowl, combine shredded cabbage and grated carrots. Toss in pineapple chunks, green onion and chicken.
  3. To make the dressing, whisk ingredients together until well blended, or shake in a container with a tight seal. Taste and adjust seasonings to your liking.
  4. Pour the dressing over the cabbage mixture and toss until evenly distributed.
  5. Garnish with toasted almonds and sesame seeds before serving.
