Tropical Panamanian Shrimp Ceviche

1 dash Black pepper (to taste)
1/2 medium pepper(s) Green bell pepper (minced)
2/3 cup Lemon juice (fresh)
1/2 tsp Oregano, dried
1/4 cup Parsley, fresh (minced)
1 large Tomato (peeled and chopped)
1 dash Salt (to taste)
454 gm Shrimp, raw (small)
1 tbsp Wine vinegar (or Tarragon vinegar)
1/4 cup Yellow onion (minced)


Clean shrimp.

Place cleaned shrimp in a sauce pan, cover with water and cook for 2 to 3 minutes or just long enough to turn pink. Drain and put into a bowl with lemon juice. Leave covered for 1 hour stirring two or three times.

Drain and discard the liquid. Combine shrimp with remaining ingredients. Mix well, put into refrigerator for 1 1/2 hours.

Note: Half an avocado can be added to mix for variety.
