1 can (15oz) Cannellini beans, canned (or use another type of white bean)
1/2 small Red onion (thinly sliced)
1 tbsp Apple cider vinegar
1/2 whole lemon(s) Lemon juice
1 clove(s) Garlic (minced)
1/2 cup Parsley, Italian, fresh (about a handful, chopped)
1 pinch Sea Salt
1 dash Black pepper
1/2 cup Cherry Tomatoes (sliced in half - can use grape tomatoes)


Combine all the ingredients except tomatoes. When ready to consume, stir in tomatoes.
