2 slice Turkey bacon, raw (nitrate free)
1 tsp Extra virgin olive oil
1 1/4 cup Egg white
1 pinch Sea Salt
1 dash Black pepper
4 slice Bread, sprouted, whole grain, Ezekiel 4:9
1 1/4 cup Plum tomatoes (diced)

Instructions


  1. Microwave the turkey bacon strips for approximately three minutes, then set aside. Alternatively, cook turkey bacon in a non-stick skillet, turning once, until they reach desired crispiness!
  2. Preheat olive oil in a skillet over medium-high heat.
  3. Whisk together the egg whites with sea salt and pepper.
  4. Pour the egg white mixture into the skillet and give it a quick swirl or two to create gently scrambled eggs that stick together.
  5. Toast your bread.
  6. Layer the turkey bacon, diced tomatoes, and scrambled egg whites on a slice of toast and top with the other slice of bread, or enjoy open-faced.

  • Garnish with chives, scallions, or herbs of your choice for added flavor and esthetic appeal!
