2 medium | Apple (sweet apple, sliced) |
4 medium stalk(s) | Celery (chopped) |
1/4 cup | Slivered almonds |
1 tbsp | Apple cider vinegar (for dressing) |
1 tbsp | Apple juice (for dressing) |
1 tbsp | Extra virgin olive oil (for dressing) |
1/4 tsp | Black pepper (for dressing) |
1/4 tsp | Kosher salt (for dressing) |
1/4 cup | Parmesan cheese, shredded (or nutritional yeast) |
1. Cut apples in thin slices shaped like half moons. Cut celery into thin angled slices and set a aside in a large bowl.
2. Meanwhile, place a frying pan on medium heat. Once warm, toss in the slivered almonds and toast until golden brown. Watch closely as they will burn easily.
3. To make the dressing, whisk together apple cider vinegar, apple juice, olive oil, black pepper and salt in a small bowl.
4. Pour dressing over the chopped apples and celery, toss until evenly combined. Grate Parmesan cheese (or nutritional yeast) over the salad.
To make dairy free - replace parmesan cheese with nutritional yeast!
Great on the side with Pork Chops!
