4 cup Baby spinach (chopped)
1 medium stalk(s) Celery (chopped)
1 tbsp Extra virgin olive oil
3 clove(s) Garlic (minced)
2 tbsp Parmesan cheese, grated
2 tbsp Parsley, fresh (chopped)
300 gm Pasta, Fusilli, dry
2 cup Tomatoes, canned, stewed
1/2 cup Sour cream, light
300 gm Turkey breast, skinless
1 medium Yellow onion (chopped)

Instructions


In a saucepan, cook pasta as directed on package. Drain; cover to keep warm.

Meanwhile, cut turkey into equal strips. Chop spinach.

In a skillet, heat olive oil on medium heat. Add minced garlic, onions and celery, sauté until onions are golden brown. Stir in turkey and cook until no longer pink. Stir in canned tomatoes, cover while stirring occasionally - 20 mins. Stir in sour cream and spinach and let it cook for another 2 minutes.

Serve sauce over cooked pasta. Sprinkle with parmesan cheese and parsley.
