1 tbsp Extra virgin olive oil
3/4 cup chopped Yellow onion
454 gm Ground turkey, extra lean (organic)
2 clove(s) Garlic
1 pinch Sea Salt
1 dash Black pepper
1 tbsp Chili powder
1 tsp Cumin
1/2 tsp Paprika
1/2 cup Salsa, ready-to-serve (organic - desired heat level)
1/2 cup Vegetable stock/broth, low sodium (organic)
8 leaf Lettuce, romaine (2 leaves per serving)
1/4 cup shredded Mexican cheese blend (optional - topping)
2 tomato Roma tomatoes (optional - topping, diced)
1/2 medium Red onion (optional - topping, diced)
1/2 avocado(s) Avocado (optional - topping, diced)
1/3 cup Cilantro (coriander) (optional - topping, diced)
8 tbsp Greek yogurt, plain, 1% M.F. (optional - topping, 1 tbsp. per serving)


Heat olive oil in a non-stick skillet (preferably ceramic) over medium-high heat.

Sauté onion about 2 minutes.

Add turkey and garlic, season with salt and pepper, cook breaking up turkey occasionally, until cooked through, about 5 minutes.

Add chili powder, cumin, paprika, salsa and broth. Reduce to a simmer and cook about 5 minutes until sauce has reduced.

Serve mixture over desired leaves with desired toppings. ENJOY!
