|1 10-inch tortilla(s)||Spinach Tortilla|
|2 tbsp||Ranch salad dressing, reduced fat|
|3 slice||Turkey, deli cut|
|1/2 cup||Brown rice, short-grain, cooked (or rice of choice, prepare as directed on package)|
|1/4 cup grated||Carrots|
|2 slice||Cucumber (peeled, cut into thin strips)|
|1/4 cup||Lettuce, romaine (cut into thin strips)|
|1 slice||Cheddar cheese, reduced fat (18%) (cut into thin strips)|
1. Heat tortilla in microwave on HIGH 15 seconds.
2. Coat tortilla with dressing. Layer turkey slices on top. Add rice onto ½ of turkey; press down to flatten.
3. Layer carrots, cucumber, lettuce, tomato and cheese in a line on top.
4. Roll tortilla around rice and veggies; cut into 2-inch pieces.
