341 gm Chicken breast, boneless, skinless (cut into 1" cubes)
1/4 tsp Turmeric, ground
1/2 tsp Sea Salt (divided)
1 1/2 tbsp Lemon juice
1 1/3 tbsp Extra virgin olive oil (divided)
1/2 cucumber(s) Cucumber
2 beet(s) Beets, raw (peeled, julienned)
1/2 bulb(s) Fennel (thinly sliced into strips)
2 tbsp Dill, fresh

Instructions


  1. Heat 1/2 of the oil in a heavy bottom pan over medium-high heat. Cube the chicken. Season the chicken with sea salt and tumeric and cook for about three to four minutes per side.
  2. In the meantime, place the cucumbers, beets, and fennel in a medium bowl. Add sea salt, lemon juice, oil, and 2/3 of the chopped dill. Mix well.
  3. Once the chicken is cooked, divide the skewers and salad onto plates. Sprinkle the remaining dill on top. Enjoy!
