454 gm Chicken breast, boneless, skinless
6 cup Chicken broth (stock), low sodium (divided)
1 tbsp Vegetable oil
1/2 medium Yellow onion (diced)
3 clove(s) Garlic (minced)
1 piece, 1-inch Ginger root (grated)
4 medium Carrots (peeled and sliced)
4 medium stalk(s) Celery (chopped)
1 medium head Green cabbage (shredded)
1 medium Zucchini (chopped)
1 tbsp, ground Thyme, dried
1 tbsp Oregano, dried
1 tbsp Parsley, dried
1/2 tbsp Turmeric, ground
1 tsp Salt
1 whole lemon(s) Lemon juice

Instructions


  1. Cook the chicken breasts with 4 cups of the chicken broth in an Instant Pot. Remove the chicken, allow it to cool, and shred the chicken. Keep the chicken broth that was used to cook the chicken in order to prepare the soup.
  2. In a large soup pot, heat the vegetable oil over medium-high heat. Once the pot is hot, lower the heat to medium. Add in the onion, garlic, and ginger. Cook for 5-6 minutes or until soft.
  3. Add the carrots, celery, and green cabbage into the pot. Stir and cook for an additional 6-8 minutes.
  4. Stir in the zucchini, the remaining two cups of chicken broth, and the four cups of chicken broth that was used to cook the chicken.
  5. Increase the heat to medium-high and bring the pot's contents to a boil. Once a boil is reached, lower the heat to medium-low, cover the pot, and simmer for 20 minutes.
  6. Add the thyme, oregano, parsley, turmeric, salt, lemon juice, and cooked shredded chicken to the pot. Cover the pot and simmer for an additional 20-30 minutes. Generally, the longer it simmers, the better it will taste!

  • Use shredded chicken from a pre-cooked whole chicken at the grocery store.
