|4 sprig||Cilantro (coriander) (for garnish)|
|4 slice||Cucumber, peeled (finely chopped, plus extra unpeeled for garnish)|
|1 pepper(s)||Red chili pepper (also chile or chilli) (sliced, optional)|

|1/2 mango||Mango (diced)|
|1/4 cup||Plain yogurt, 1- 2% M.F.|
|1 dash||Salt and pepper (to taste)|
|6 large||Shrimp, raw (peeled, deveined)|
|6 chip||Tortilla chips, plain, white corn, salted (or chip of choice)|
Cook shrimp in boiling salted water for 3-5 minutes, until cooked. Drain and set aside.
In the bowl of a blender, combine the yogurt, chopped cucumber, lime juice, mango, salt and pepper. Pulse until your get a smooth sauce. Adjust seasoning if necessary.
Assembly: Put a small dollop of sauce on each chip and top with shrimp. Add another dollop of mango tzatziki on top of the shrimp and garnish with unpeeled cucumber cubes, chili and cilantro. Keep refrigerated until serving.
