This Unstuffed Cabbage Casserole Recipe is a great family dinner idea; full of healthy vegetables and lean protein.

Beef, ground, extra lean

Sweet onion
(chopped)
1 large pepper(s)
Green bell pepper
(seeded, chopped)
3 clove(s)
Garlic
(minced)
1 can (14 oz)
Fire Roasted Diced Tomatoes
1/2 tsp
Paprika
(Smoked)
1/2 tsp
Oregano, dried
1/2 tsp
Garlic powder
1/2 tsp
Onion powder
1/2 tsp
Salt
(to taste)
1/2 tsp
Black pepper
(to taste)
4 cup
Green cabbage
(cored, chopped)
1 1/2 cup
Quinoa, uncooked
1 cup, shredded
Cheddar cheese
Instructions
In a high-sided skillet (or Dutch oven) over medium-high heat, saute olive oil, ground beef, onion, and orange pepper. Cook until beef is browned and onions are translucent.
Add garlic and saute for 1 more minute.
Stir in diced tomatoes, paprika, oregano, garlic powder, onion powder, salt, and pepper. Top with cabbage. Cover and cook for 15-20 minutes or until cabbage is tender.
While the unstuffed cabbage casserole cooks, prepare quinoa as per package directions.
Top casserole with cheese, and cover until melted. Serve over rice or grain of choice.
