Wash and dry fruit. Place fruit pieces and peeled clementine slices on parchment paper.
Melt the dark chocolate chips in the microwave, and dip fruit in the chocolate and lay them back down on wax paper to dry.
Add unsweetened shredded coconut to the clementines and raspberries, sprinkling coconut on the wax paper before laying down the chocolate-dipped fruit, and then sprinkling again overtop of the freshly dipped fruit.
Arrange chocolate covered fruit in a heart shaped box as a great Valentine's gift!
